The first of my healthy 🌮 tuesday series is here ✨ featuring cauliflower and chickpeas! I've teamed up w/ the amazing ladies @properattireus to bring you this super healthy vegan and #glutenfree taco recipe. What you'll need: 1 small head Cauliflower 1 cup of cooked chickpeas 1 cup of chopped red cabbage 1 tsp avocado oil (optional) For the topping: 1 ripe avocado, ½ cup chopped cilantro chopped, ½ lime juiced, For seasoning: 2 Tbs Chili Powder, 2 tsp Ground Cumin, 1 tsp Smoked Paprika, ½ tsp Garlic Powder, ½ tsp sea salt, ¼ tsp Ground Pepper Recipe: Simply sauté chopped cauliflower, red cabbage and chickpeas with some avocado oil & stir in your favorite spices (salt, 🌶 , paprika, cumin, ginger etc.) Cook until tender. Make sure that everything is mixed well. Meanwhile, prepare your toppings. Slice the avocado, chop the tomatoes and cilantro. Mix all in a small bowl. Add a drizzle of avocado oil, sprinkle some salt and add your lime juice into the mix. To assemble your tacos, take a scoop of the cauliflower and add onto your tortilla. Top it with your avocado salsa. Invite your bff over and enjoy together! More the merrier, right!?
